"Calamaretti are pasta tubes – like squid rings, hence the name. It’s a fun shape, and the one we use is incredibly high quality – you can feel the roughness, like sandstone, and it takes an age (well, 18 minutes) to cook. The recipe below is slightly different to the one we serve at Bocca di Lupo – there we don’t use the courgettes, and instead have some rings of fresh squid to toss through the sauce in the last moments of cooking. I’m not sure which version I prefer." Jacob Kenedy

You will be provided with all the necessary ingredients to complete this dish for 2 persons. It will have 8 short steps which are detailed on a recipe card, a youtube video, and a group Zoom cook-along.

You will need:
- 1 pot for boiling the pasta, plus a colander
- 1 wide casserole or frying pan
- A knife and a board

Your pack serves 2 as an main (or 4 as an antipasto), and contains:

  1. Calamaretti pasta
  2. Clams, courgettes & parsley
  3. Squid braised in white wine
  4. Mullet bottarga mixed with breadcrumbs
  5. Merinda tomatoes

ENJOY! This is a complex seafood dish, and likes a comparable wine – plush or mineral whites, or more complex rosés.
